Baked Bean Lasagna

This is a British recipe, again from my Marks and Spencer's Microwave and Freezer cook book. I have adapted this over the years to suit me.

Also please note, my bowl is clean, it is just well used...........I have had comments from people about it, I will not name them!!!!! LOL

Ingredients:

5 lasagna noodles
oil
salt
boiling water

Beef and Bean Sauce

1 tablespoon oil
1/2 lb ground beef
1 large onion chopped
2 x 15 oz cans Heinz Baked Beans in tomato sauce (or whatever brand you like)
2 tablespoons tomato puree
1/2 teaspoon ground nutmeg
salt and pepper
1 to 2 cups shredded cheese



Cook the lasagna noodles on the stove top in boiling water, until done, drain.

Meanwhile in a microwavable boil add oil and chopped onion and cook on high for one minute.




Add beef and cook for three minutes, stirring once.



Drain excess oil off of mixture. Add the rest of the ingredients and stir. Cook on high for 10 minutes, stirring twice.



This is how I set up the production line of assembling!!




First put a layer of sauce in the bottom of the dish.




Add a layer of noodles.




Then add another layer of sauce, another layer of noodles, finally finishing with a layer of sauce.

At this point you can cool it and pop it into the freezer. Or you can add the cheese and pop it back into the microwave for another couple of minutes to melt the cheese and warm it through.



I was given some western baked beans, which has kidney beans, corn, onion and pepper in it, so I substituted a can of those in place of the regular beans. This recipe will feed three adults no problem. Add a salad and garlic bread and it will feed four. To stretch it out a bit more, add another can of beans, and more lasagna noodles. I know its a bit unusual, but it is yummy!!!!!

On a recent episode of EastEnders they mentioned Lasagna made with beans and many people on YouTube commented yuck. I had to google and see cause this is an excellent source of protein and it can be made meatless for Lent. Thanks for the post. This is something I will try in Maryland.
