Well, it's not a fluke, a recipe and other "stuff"

This week's column is here  so I am not a one week wonder...LOL  I do however need a big favour from all of you.  If you want and only if you want, tell all your friends and family about it and ask them to leave a comment!!!  A big thank you in advance for doing that!

Today's recipe uses a meat that you either love or hate, I don't think there is an in between as far as liver is concerned is there?

I love liver always have, and as I am lacking in iron in my body this is a simple way for me to make up that iron deficiency.  If you can, pick up calves liver, however beef liver is fine, just soak it in milk for an hour or two in the fridge before you want to use it.  Beef liver can be a bit harsh tasting, so soaking it in the milk takes away that harshness.



Liver Casserole:

Ingredients:

Pack of liver, around a pound in weight
half a dozen slices of bacon chopped into small pieces
1 onion sliced and roughly chopped
1/2 lb or more of mushrooms, sliced
flour
seasoning
Oxo cubes, or concentrated stock
Worcestershire sauce

Fry bacon in a large pan until it has released a lot of its fat.

Meanwhile cut up liver into bite sized pieces, and coat them in seasoned flour.  Add to the pan with the bacon and sear the meat until browned on all sides.  Add in the mushrooms and onions and continue to fry adding some vegetable oil if needed.

Cover the ingredients with water and bring to the boil.  Add in a couple of Oxo cubes and a couple tablespoons of "W" sauce.  Turn down to simmer and simmer for around an hour.  If the liquid is too thin, dissolve a couple of teaspoons of corn starch/flour in some cold water and add to the pan.

You can also add frozen peas and corn 15 minutes before the end of the cooking time.

This is good served with mashed potatoes or rice.  The leftover's are good for lunch next day even if its just the gravy and rice left.

***You don't have to add the bacon if you don't want too, I didn't this time and it's still as good***

Do holiday shopping right after the holidays. Most people use this technique for Christmas, but it works for every holiday. Wait until about two days after a holiday, then go out shopping for items you need that are themed for that day. Get a Mother’s Day card for next year the day after Mother’s Day. Get Easter egg decorating kits the day after Easter. Get wrapping paper and cards and such the day after Christmas. The discounts are tremendous, and you can just put this stuff in the closet until next year, saving you a bundle.

Whoops you lost me on that recipe Gill, I cannot eat liver. The last time I had liver was when I was sweet 16 and a friend had invited me to dinner, yes liver was on the menu. Same with kidney, it always has to be picked out when having steak & kidney pie or pudding. I must have missed the money saving post so the link was great. I'm happy to be part of the saving club♥

Haha this will be one meal I will not be able to make. I honestly can't stand the smell of it cooking even. I'm glad others like it but wow its just not for me.

I like liver. I think why alot of people dont is probably because they have never had it cooked properly. My mother made it so tough I could have used it as new soles on my shoes, but nowadays we can all get better quality meat and as the television chefs tell us we can eat the meat slightly pink and not the grey/dark brown like my mothers.

I've never been a liver fan ~ although, I've never tried the trick with the milk to eliminate some of that harshness. Perhaps some day I will be brave enough to give it a whirl!

Liver makes me very very ill. I ate it willingly before becoming a vegetarian as a teenager. And I have never ever been so sick in my life!!! I'm no longer a veggie but have never gone back to liver! lol
