Tasty meal

 




Made these veggie burgers the other night.  I buy the veggie burgers from Costco and the burger buns from Zehrs, which is a PC store.  Those burgers are so tasty.  I cook them in the air fryer for 20 minutes, turning them half way through, so they cook evenly on both sides.  I enjoy these mini buns, better than the larger ones; but can only get them at stores which sell the PC products.

We had two each for our supper and they are so filling.

Although I am not vegetarian, I don't eat much meat, so we probably eat more meatless meals than meals with meat.  One of our grand daughters is pescatarian.  She is only 9 years of age, but made this choice over a year ago and has stuck with it.  We thought it was a passing phase, but I guess not.

What do you do when it's hot and humid outside?

Well of course I decided to bake......as why not....LOL

I picked some rhubarb the other day and hadn't gotten around to using it, so decided to use some in the rhubarb cake,  I used this recipe.

I had to use up the rest of the leeks, so made a leek and smoked cheese quiche.
While the quiche was cooking I popped in some potatoes to make roasted potatoes which I coated in balsamic vinaigrette.
Supper was quiche, potatoes and salad.  With a piece of rhubarb cake for pudding.  It was yummy!

It's zucchini/courgette time of year again.

One of my favourite meals that involve zucchini is Sausage Risotto:

Here is the recipe.  What you see in the dish above is what was leftover after our supper.  I will put this in a freezer bag and freeze it for another meal and bulk it up with more veggies if need be.

I did a post back in 2008 for 50 + 1 recipes for zucchini here.  I can't guarantee all the links will work now, but I know some of them do.

I finished off another person for Christmas yesterday by ordering a couple of things online.  That will make four people totally done.  Very happy about that. 

I gave away a couple more of my gnomes yesterday also, they will be heading to Grand Cayman next week.  Three went to California this week.  I wasn't planning on giving the gnomes away yesterday; took them out of the pile I am knitting for Our Little Man's birthday.  So back to the knitting needles to get more knit.

No Pan Haggarty last night...

Was too tired to make the Pan Haggarty, had this instead:
It was so good and used up a few things in the fridge.

The sweet peppers are coming along nicely.
 As are the mini yellow tomatoes.
 Picked rhubarb from this pot, the blueberries are nearly ready as are the strawberries.  They will all be transplanted out of this pot when done.
 This begonia I have on the front porch is so pretty.

Have you ever eaten a meal that you made and said:

"Gosh that was good, I really enjoyed it?"

I said that to myself last night, I did really enjoy my supper.  It was nothing fancy just plain food but it really hit the spot as they say.
As you can see all I made was sausage rolls, coleslaw and a garden salad.  I found a package of peaches in the freezer, so I made a peach and raspberry jam crisp.  The original Apple Crisp recipe is here.  The sausage rolls are just a package of sausages with the skin taken off and put between some puff pastry.  Nothing exciting.  Cooked both things in the oven for around 40 minutes at 375 oF.

There are enough sausage rolls and peach crisp for another meal.  I am not following my menu plan to the letter this week, as I have switched days around, due to one reason or another.

Also we started to unpack those two boxes yesterday.  Here is what we took out:


The packages on the breakfast bar also came with it.

Today is my first and apparently only knitting lesson.  Wish me luck!
