Couple of "recipes,"

I made Scotch Eggs for supper on Monday night.  They were so good, I must make them more often, as they were so simple to make.

To make them you need:

Hard Boiled Eggs
Sausage or sausage meat
1 egg, beaten
Seasoned flour
Either breadcrumbs or coating of your choice

Peel hard boiled eggs. If using sausages take them out of the casings.  Then wrap the eggs with the sausage meat.  I used breakfast sausages and needed three per boiled egg.  You can add any type of seasoning you want to the sausage meat.  As I like "plain" food, I am happy as is.

I put mine back into the fridge to firm them up.  When ready to cook them, roll in seasoned flour, dip in the egg and then toss them in breadcrumbs or coating.  I used a package of Shake and Bake. (One scotch egg looks different from the other; far right, as I used different sausages on that one)
I placed them on a tray covered with tin foil and then parchment paper; easy clean up!  Cook at 375 oF for around 45 minutes, turning them over half way through.  They are as good cold as they are hot.  Dh will be having one in his lunch every day as well.

We had one with roasted potato wedges, that cooked at the same time and coleslaw.  It was a yummy supper.
For afters I had stewed some rhubarb, made some custard and topped it all with a little strawberry yogurt.  That was good also and there was enough left over to have it for tonight's dessert cold.
Rhubarb and custard was something we had as kids.  That along with Scotch Eggs are very British.

They look really good, they're so simple to make aren't they, I will have to do them again soon. And I need to make some rhubarb and custard too. LH mentions the rhubarb needs using every time he walks past the rhubarb patch ..... and he loves custard.

Rhubarb is prolific here at the moment so we are having a lot of it in lost of different guise. Scotch eggs make me think summer picnic/buffet. Yours look wonderful.

I made scotch eggs at school. Found it fiddly. My sausage meat fell off and I couldn't get a nice even layer around. Anyway since then bought only . Still I love them but they are so easy to come by here in UK why make them.
Your US readers might like to know they are great cold in a picnic. Staple of the British picnic :)
I generally have a supply of hard boiled eggs in our fridge. I can make those :)

I haven't made scotch eggs for a very long time, must make them soon. Yours look good. I've been cooking up my rhubarb too, and will probably freeze some for use later in the year.

Scoth Eggs! My father must have sampled them while he was in England right around the time I was born. I remember him making them for us a couple of times but since our sausage is different than yours, he made a chopped (minced) meat mixture that mom makes for meat patties and used that to cover the eggs. I remember him frying the covered eggs but, your method seems healthier. It's been 21 years since he passed away but there is a reason every single day to remember him by. Thanks Gill...

I like Scotch eggs. When we lived in France we made the ourselves like you, but now in the UK they are so available ready made that it's hardly worth it. That's being lazy, we must make our own again. You had me worried about your poor cat when I saw stewed rhubarb... once of my favourite things in the world.

The swanky restaurant I once worked at had Scotch eggs on the weekend brunch menu though I never had one there as an employee meal. (Because the owner was of Scottish descent and was notoriously cheap and prided himself on that fact. lolz)

I have always meant to make these but just never got around to it.
Perhaps I'll do it this weekend when Hubs is off from work as this is something I KNOW he's like. ;-)

Not so keen on Scotch eggs, but I love rhubarb and custard. Sometimes I make a rhubarb crumble which always goes down well with my husband. I've been reading your blog for a little while and today I was taken aback by the beautiful colours on your header - a cheerful start to the day. :)

I have always said I was going to make Scotch Eggs but have never gotten around to it. I might have to give it a whirl soon. Son3 is having his girlfriend visit for a week and this might be a great breakfast idea. Thanks for some inspiration!

I have never had a scotch egg. Sounds interesting. I love Rhubarb and custard. My husband's grandparents were from England so he grew up on custard. You don't whine Gill.

The tearoom mentioned in my post this week serves Scotch eggs so it was interesting to learn how they're actually made.

At the Totally British Festival, there were some booths selling Coronation Street paraphernelia but I didn't see anyone from Coronation Street there...

That looks really yummy. I've never made scotch eggs but I remember my mum trying them out once when I was little. I think it was all the rage there for a while. I might give it a whirl

Never tried Scotch Eggs myself and neither has Grenville, who is Scotch-Irish descent so this is a new one for both of us. Looks easy enough except for putting the sausage around the egg, but plan to try in the future.
