Super simple cook 1 1/2 cups quinoa in 3 cups of water for 25 minutes. I flavoured the water using a veggie bullion cube. Used a can of mixed beans. Some veggies, in this case baby tomatoes, mini sweet peppers and red onion. Added crumbled feta cheese and dressed it with Balsamic Vinaigrette.
We will munch on that all week.

Love the stuff too, but it would take me a week to eat that by myself. M. Won't touch the stuff. I've tried freezing it but it seems to go funny 😕
I have come to really enjoy quinoa and I really like the red variety - and yes, I cook it in broth or juice for extra flavour.
I keep thinking that I need to try quinoa and haven't as of yet. Your recipe seems very simple and tasty. Just might have to give it a try.
