When my grandmother kept hens my mother used to preserve eggs. She used the preserved eggs in cooking but never as boiled/fried/poached as the taste wasn't brilliant. Once grandma no longer had hens we no longer had preserved eggs as there is little seasonal variation in the price of eggs in the shops.
my gran used to do this when i was a kid , she used to use the eggs for cooking all winter , i still have her crocks , sadly we arent allowed to keep chickens here , lol were not allowed to do a lot here at all
