Another yummy recipe and a "Snow Day"

As I was passing a co-workers computer on Tuesday he had a yummy looking recipe on his computer screen.  It turned out his wife was taking part in a casserole exchange and she was making Undone Stuffed Pepper Casserole from the Kraft Recipes Site as her recipe for the exchange.

What You Need

1 lb. lean ground beef
2   green peppers, coarsely chopped
3 cloves garlic, minced
2 cups  cooked long-grain white rice
1 jar (24 oz.) spaghetti sauce
1-1/2 cups  KRAFT Shredded Italian* Five Cheese with a Touch of PHILADELPHIA, divided

Make It

HEAT oven to 350ºF.
BROWN meat with peppers and garlic in large skillet; drain. Stir in rice, spaghetti sauce and 3/4 cup cheese.
SPOON into 2-qt. casserole; top with remaining cheese.
BAKE 25 min. or until heated through.

Now I only had a red pepper in the freezer, so I added a red onion chopped as well.  I had some cream cheese that wanted using up so I put half a packet (4oz) in the casserole instead of the cheese.  Although I did put grated cheddar cheese on the top to finish.  This is an ideal recipe if you have leftover rice, as it requires cooked rice.

It was really good and a keeper.  If you can get red or green peppers cheap, chop them up and pop them in the freezer for use at a later date.  The photo was taken before I put it in the oven.  I made a pear crisp to go into the oven at the same time, the recipe for Apple Crisp is here.

So we had what they are calling the worst winter storm for this winter so far on Wednesday.  We knew it was coming, as the media went over board at telling everyone.  Dh couldn't go to work as it was that bad and there was only the odd car/truck going by on the road.  It was supposed to stop by lunch time.......well the wind calmed down, but it then continued to snow even harder???

Dh was a love and took over snow blowing duties, but there was so much of it, that the poor snow blower was struggling.

It was really deep so it's going to take a couple of days to get this all cleaned up.......

Can't you fit a snow blade to the front of your vehicle and scrape the snow of the driveway?

Looks Bl**dy cold, anyway! LOL!

My goodness Dh needs a medal for even going outside in that weather. The pictures showed how awful it was.

It was a doozy! The snow was higher than the snowblower blades on the tractor so it took forever....and the wind was horrid blowing bits of ice that felt like knives.

So glad the snow arrived safely! LOL We're still waiting for it to get above freezing here. Very little moisture. State has been doing controlled power outages to have enough to go around. We were so cold we got to keep our electric on all the time! Mom spent the day getting fifteen minutes on and forty-five off yesterday. We're ALL ready for it to warm up!! ~Liz

Wow, it does look wintry in those last photos...

I raise bell peppers every year and freeze a bunch to have for use through the winter. I always loved stuffed bell peppers...loved the flavor of bell peppers but didn't like it to eat. It tore my stomach up.

So years and years ago, I started placing what would equal about one-two bell pepper cut in strips in the bottom of the casserole dish..

I chop up as much onion as I want, which is quite a bit for us, I brown and drain the ground beef and onions, and pour over top of the bell pepper...I did used to add the rice and some cheese but my husband did not like it.

So now I leave those out, just have the bell pepper and ground beef and onion mixture, then pour enough tomato juice over it to almost cover it all...just tips of the ground beef will be tipping out...

Then I stick in the oven at 325º for about an hour and a half...and serve with mashed potatoes. And this is one dish that is definitely better as a leftover...or at the very least allowed to cool down to room temperature...then heat it again if you want.

I know this is close to the recipe you gave...actually could hardly believe it when I read it. I am the only person besides my girls that I have ever heard of doing anything even similar to it.

Both my girls love this...and my husband does to. but he likes almost anything so to say he likes something is not saying a lot...
