Homemade Baked Beans........sort of

 Baked Bean's

 2 cans Heinz baked beans
 1 can kidney beans
 1 green pepper - chopped
 1 onion - chopped
 3 tbsp brown sugar
 8 bacon slices - slightly cooked and chopped into bite size pieces
 Ketchup

 Mix ingredients except ketchup. One layer of beans topped with ketchup. Second layer of beans topped with ketchup. Cook covered at 350 for 1 hour then uncover and cook for another 1 hour. 




This recipe is from dd in law's.  I have always found them a little too sweet when dd makes them.  So I made a couple of changes to the original recipe.


  • I did not layer the beans as the recipe suggests with the ketchup.  I only added the one layer or ketchup on the top.
  • I cut down the sugar to two tablespoons.
  • I did not add the bacon.
Dd says these taste better the second or third day.  I made them on Friday to eat on Saturday.  I had a taste on Friday and found them sweet enough for me.  This is a vegetarian dish if you omit the bacon.  Maybe Jane can tell me if it's a vegan dish as well?

Why I said sort of in the title is that you start with two cans of baked beans in tomato sauce, so it's sort of cheating in a way I think to say they are totally homemade.

It's our son's birthday today so we are having a joint Easter Saturday/Birthday lunch for him.

That looks really good, and vegan too as long as you don't use honey instead of sugar. I love 'doctored' baked beans it makes them taste so much better and quite as good as home made without the faff. I do similar, but add a can of any other beans as well as the kidney beans. I add a couple stalks of finely chopped celery to mine too. I love sharing recipes, don't you?
Ketchup is such an amazing ingredient!

Did you make them in the supermarket carpark? Nope, well then they are home made. This looks doable. Im not into soaking beans for ever. Its no different from adding canned tomatoes or soy sauce or any other pre made ingredient. Come to think of it, i have all these ingredients in my pantry, so thats lunch sorted. They can have their lamb roast tonight.

I use baked beans in a myriad of dishes, I have cooked them from scratch and they are better but it takes forever. I had a portion of bolognese sauce from the freezer for dinner last night, 20 minutes before I wanted to eat a friend turned up. I sweated off celery, pepper and onion stirred them into the sauce, added a tin of baked beans, one of tomatoes and a good shake of ketchup, simmered it for about 10 minutes and served it over steamed cabbage, delicious.
