Such a comforting meal and super cheap to make.
Baked potatoes topped with a knob of butter, baked beans and grated cheese. I bought the potatoes on clearance, a 10 lb bag for $1.99. Bought the Heinz baked beans when they were $1 a can at Metro the other week, a price which I haven't seen in a long time. The cheese we bought as a splurge at Costco. I would reckon all in all this meal would cost under $2 per person and was yummy.
As I said we bought the cheese at Costco. It's called Leerdammer and is Dutch cheese and is a cross between Gouda and Edam. It's pretty tasty.I love a sharp cheese, and other than blue cheeses which I dislike, I could eat cheese each and every day.
Do you make baked potatoes? If so what do you put on them?

We stopped buying anything with modified maize starch and glucose fructose syrup.
M&S has started a UPF-free range, Only…Ingredients, so I bought baked beans to try. 75p is reasonable, between standard at 45p, and £1.10 for organic.
I like it that the ingredients are clearly printed on the front of the label.
Haricot Beans (49%) • Tomatoes (34%) • Water • Agave Syrup • Cornflour •
Salt • Ground Paprika.
The alternative is a homemade tomato sauce, frozen in portions.
Living on my own I find it so much easer to bake a potato than prepare them any other way. Usually I have only butter, I can't use up a container of sour cream fast enough before it goes off. I agree cheese goes with everything, apples, apple pie and fruit cake.
mmmm - that looks so good! I love potatoes and baked with butter and sour cream is the way to go. My favourite is scalloped potatoes though - yum.
We used to have baked potatoes before Rick got carb crazy. But he will eat sweet potatoes, which I've never baked but I might try this, especially with chili, which I think would be good on the sweet potato. Thanks for the idea.
