Anzac Cookies/Biscuits

ANZAC Biscuits are an Australian cookie. I have seen them on various Australian sites and stumbled upon this recipe over on this blog I decided to try the recipe and see how it was.

Ingredients:

1 cup plain flour
1 cup granulated sugar
1 cup rolled oats
1 cup shredded/desiccated coconut
120gms(around 1/2 cup or 5oz) of butter, melted
1 tablespoon of golden syrup, corn syrup is a good alternative
2 tablespoons of boiling water
1 teaspoon of bicarbonate of soda/baking soda

Method:
Mix together dry ingredients



Melt the butter and golden syrup in a saucepan. Dissolve the baking soda in the boiling water and add to the butter/syrup mixture.



Mix into the dry ingredients.



Spoon onto greased cookie sheets. I got 2 dozen good sized cookies. Bake at 310oF for around 12 to 14 minutes.



They should be golden brown. Cool on the tray for a couple of minutes before transferring to a cooling rack.

Will say they were super easy to make and are pretty tasty. I can see me making these again in the future.

They're lovely and crisp. But we always called them Flapjacks. I think the Aussies just stole the idea.

Oh Gill I realise that in North America biscuits are akin to small dinner rolls but sorry, they must never be called cookies

The term ANZAC is protected under Australian law [1] and therefore the word should not be used without permission from the Minister for Veterans' Affairs [2]; misuse can be legally enforced particularly for commercial purposes. There is a general exemption granted for ANZAC Biscuits, as long as these biscuits remain basically true to the original recipe and are both referred to and sold as ANZAC Biscuits and never as cookies.

They look very good. Bet they would be delicious with a cup of tea.

Problem is most of my family does not like coconut. Myself I love it in cookies or on a cake.

Those look pretty tasty. I always buy unusual cookies and grabbed some rolled oat cookies at the store last night. Mostly now, they're gone. hahahaha. I should try these biscuits-never to be called cookies. I adore coconut.

Ah we love anzac biscuits - but then it's almost un-australian not to have a penchant for them!
