I have to admit, the only way I prepare parsnips is by roasting them, so I am as interested as the rest of you as to how else you can cook parsnips.

Hate to suggest it, but perhaps brussel sprouts? I've just learned to like them, here in Poland, because they're so fresh!

I grew up thinking I wouldn't like parsnips as my family never served them. Then I cooked some myself to find out what they taste like and... I LOVE them!
I love parsnips...love them roasted thinly, so they are crispy, even nice when cold...like em roasted thickly...like curried parsnip soup..soup with cumin...perfect for a cold day...like parsnip mash...good with sweet potates, etc as roasted veggies...I could go on.
Did you know they are carcinogenic though? (Sorry..am a biologist)...Course you have to eat millions at once for it to do you harm hehe...sorry...couldnt resist.
Irish style...cooked in bacon fat..national dish it bacon and cabbage (gammony ham...delicious actually, served with mash potatoe and parsley sauce..).
