When I talk about garden salad, for us it means, lettuce (generally romaine lettuce), tomatoes, cucumber, sweet pepper, red onion and radishes.
When you make a salad what is your go too salad ingredients?
If you have not cooked quinoa before here are the basic instructions. In a pan bring to boil 2 cups of water, a tablespoon of oil and a teaspoon of salt. Add one cup of quinoa, stir and turn down the heat to low. Cover pan and on a low boil cook for 25 minutes. You know it is cooked when you see those little white "rings." I used a multi-coloured quinoa this time. Let it cool.
As I said I make this as simple as possible by adding diced cucumber, grape tomatoes sliced and sliced red onion. Mix with the quinoa and I use a prepared salad dressing, as I love this particular one, which is the Greek Feta variety. Mix some in and let sit for a couple of hours for the flavours to mix together. This is what my supper looked like on Friday and it was so good. I enjoy the Low Calorie Creamy Poppyseed Dressing that Kraft makes.

I love quinoa. Last year I was taking a relative to a hospital in Etobicoke twice a week. While she was doing her thing, I would go to the food court. There was a place there that only sold grain based dishes. They had the most amazing quinoa salad. I think your recipe closely matches it.

I plan to use couscous a lot more in salads. Just started adding mixed beans and it really made the salad so much more filling. Stay safe. x
I love a salad and normally eat one about 5 days out of 7 - unfortunately, fresh fruit & veg is the one thing that I'm running out of at the moment - and don't plan on going out until this coming Thursday.
I tend to put just about everything into a salad - including warmed up leftover veg. I will alternate between proteins - chicken one day, eggs the next and then beans the next - that sort of thing.
As for greens - I like a mix of Mixed Spring Greens and either a kale or broccoli "coleslaw" mix and then add everything else.
I have never made Quinoa but have lately been tempted to give it a go. I am going to try your salad recipe after I work up the courage.
