A frosty start to the day and a couple of recipes......

There was a hard frost on Wednesday morning.  I don't think I will be hanging out the washing anymore in just my nightie!!  It was cool enough that in the afternoon I put the fire on.  We still don't have the heating on.  The black container on the top of the fire is a cast iron pot that contains water; it's to keep moisture in the air, as the fire makes our skin dry.


For supper on Wednesday night I made Ham and Zucchini skillet with mashed potatoes.

To make the Ham and Zucchini Skillet you need the following:

2 Zucchini, sliced
1 Onion, sliced
1 -2 cups cooked ham, cubed
Salt and pepper
Garlic Powder
Olive Oil

Place the olive oil in a frying pan/skillet.  Add onion, zucchini, and seasonings, and fry over medium heat for around 10 minutes until veggies have softened.  Add the ham and cook for for another 5 minutes until the ham is warmed through.

This was enough for the two of us,  so adjust the quantities accordingly.  We had it with leftover mashed potatoes.

Stuffed Chicken Breasts with cream cheese and spinach.

For each person you need:

Boneless, skinless chicken breast
2 slices bacon
1 tbsp cream cheese
spinach leaves

Flatten a chicken breast by putting it between two pieces of cling/plastic wrap and "whacking" it with a rolling pin, or with a wine bottle!!

When you have flattened it, spread one tablespoon of cream cheese, I used the chive and onion flavour, on one half of the chicken breast.  Add a couple of spinach leaves on top of that, and fold over the other half of the chicken breast on top of it.

Cut the slices of bacon in half and place on top of the chicken.  Place in a dish and bake uncovered in a 375 oF oven for around 40 minutes.
I don't have a photo, but it was really good.

Here's a simple breakfast recipe:

SAVOURY HAM, EGGS AND BAKED BEANS
INGREDIENTS


2 thin slices of ham
2 eggs
140g can of baked beans in tomato sauce
salt and pepper to taste

METHOD
Grease 2 small ramekin bowls.
Layer ham inside ramekins allow a little to protrude over top, trim any excess.
Add half the beans to each ramekin.
Top with a cracked egg and pierce the yolk once.
Place in a microwave and heat on high for 2 minutes or until eggs appear cooked.
Serve to table with hot buttered toast.

Note: Can be ‘spiced up’ by the use of items such as cracked black peppercorn, chili flakes, chili sauce or chutney.
Spaghetti can replace baked beans

I like the look of both recipes Gill but will definitley try the chicken dish. You have frosts already? It is colder here but so far we have resisted switching the heating on. It won't be long now though. A x

I just love a proper fire, there aren't too many of them here in Perth and we don't have on in our current house. Just one measley gas heater in the living area that's for the whole house - brrr! When we lived down south where it's colder we had a fire. I loved it but didn't like the chopping, picking up kindling and then cleaning it after so much. But it was worth it!

All warm and delicious! Getting cool down here, too. They are actually using the word "cold" for this coming Monday. I'm digging out blankets and afghans. Already have the sweaters out. Hang in there! Get those Canadian socks off the line!

We haven't put the heat on yet either but it is getting a tad chilly - just wearing a sweater to compensate.

We have 2 gas fireplaces so maybe we can get by with just using those when we need them and not turning on the heat - but there aren't any upstairs or downstairs where my FIL lives, so it won't be too much longer before the heat goes on.

One thing I miss about living in my own place is having a working fireplace! I have a fake one in the living room of my new apartment, but it still doesn't make up for having a real one, I miss the warmth and cheeriness of it.

That recipe you make for dinner sounds yummy, I'll have to try it!
