What to do when you don't have time to can tomatoes....

Make "freezer tomatoes" so that when you do have time to make tomato sauce, or when you fancy tomato sauce in the middle of winter, you can pull out the tomatoes from the freezer and make sauce.

The first thing you do is get organized.  Make sure you have a bowl of iced water, a pan of boiling water and your tomatoes.

Place your tomatoes in the boiling water for a minute or so.  Sometimes the skins of the tomatoes will crack, sometimes they won't it doesn't matter either way.


Then place in the iced water.
Take the skins off the tomatoes, they will just slip off.
Cut the tomatoes in half.  I cut out the stalk end but didn't remove the seeds.  You can remove the seeds if you want.  I then put them in a colander to drain for a while.
I then placed them in a freezer bag, and will freeze them for use at a later date.
Had another rip-roaring exciting day on Tuesday.  It started with a trip to the dump.  Was pretty exciting as we got to dump our stuff outside, instead of the stinky mind numbing smelling inside area!!!  Then went to Home Depot and bought a 32 foot ladder; which meant we had to hire the Home Depot van to bring it home.  That involved dealing with a Home Depot employee who was as happy as someone who had just lost their favourite pet; oh, and who followed the Home Depot rule book to the exact letter!!!

By the time we had ran back and forward with that and came back home again it was after 11:30 am when we got home.  We then made a trip to Barrie to pick up a few things, and to give us both a rest.    After supper I did a little bit of grass cutting before deciding to sort out the tomatoes.

Tomorrow I will be down the old basement all day helping dh change the electrical panel.......I know how much more excitement can I take!!!!!

We had our first fine day for a week, so after doing my morning post I went out and cut the grass (which was 'knee high' after the rains and spring warmth!).

You see, it really was a romantic trip to the dump. . . . . . . .But you had better slow down the pace. If you get everything done now, there won't be anything for you to do when you retire!! LOL

Gill, I freeze them whole and raw. I don't blanche or peel them. When you thaw a bag the skins split as they are thawing, and slip right off. Less work=Happy Day :)

My mom used to freeze tomatoes the way you did, except without the ice water. I think she just let them cool on their own.

Hi British woman, from another British woman here in rural Canada.
I live in Kirkfield (nr Beaverton). We've been in our (needs renovating)house for almost 7 years and are still learning rural ways (by trial and error) everyday. It can be a struggle but we have a lot of laughs along the way.

I use a 'Vac Pac' device to prepare my stuff for freezing but with wet materials like your tomatoes you need to be careful it doesn't suck the juice out as well as the air - what a mess in the machine! LOL! I drop the bag and its contents over the edge of a 50mm cutting board so that the juices are not easilly sucked up!

We went to the dump a couple of times over the long weekend. I love looking in the garage now and seeing all that empty space. At this stage of the game these kind of things make me smile. Thanks for the great idea on the tomatoes. I never thought of freezing them before.
