Hard Boiled Eggs
Cheese Sauce Recipe:
1/4 cup flour
1/4 cup marg
2 cups milk
2 cups grated cheese
1 tbsp mustard
salt and pepper
Melt marg, whisk in flour and cook for a minute. Whisk in milk and mustard, and whisk until thickened. Add grated cheese, and salt and pepper, stir until melted.
Cut hard boiled eggs in half, and place in casserole dish with yolk side up. Pour cheese sauce on top, and place mashed potatoes on top. Place in an oven for half an hour until all heated through. Or if its all hot, place under grill to brown the top of the potatoes. I have frozen this casserole with no problems.
Apple Berry Sauce.
Pack of reduced apples, peeled, cored and sliced. Pop into a saucepan with a little water and some frozen berries, mine were mixed berries. Cook on stove until the apples are soft, five to ten minutes. Place in a blender and puree to the consistency that you like. I personally don't add any sugar but you can if you want.
The reason I decided to post these recipes as both are super cheap to make and can be doubled, trebled or whatever. You can't go wrong with either, and in the case of the egg pie, if you have leftover mashed potatoes, this is a way of using them up.
