I was checking out some blogs today, when I stumbled upon this recipe over at Linda's blog. I figured what the heck, I may as well give it a try.
Easy Plain Cake
Ingredients:
1 1/2 cups self raising flour
pinch salt
3/4 cup granulated sugar
2 eggs, beaten
1/2 cup milk
1/2 teaspoon vanilla
5oz butter, melted
Sift flour and salt into a mixing bowl. Add all other ingredients. Using a fork for mixing (I actually used a wire whisk, it was easier), combine all ingredients well.
Grease and line with greaseproof paper, a 22-23 cm (9") ring microwave safe container. Now the only dish I had was this silicone container I bought when we were in the States, its a bit big, but figured it would do. Pour batter into dish.
Microwave on HIGH 4 minutes. Stand 5 minutes. Turn out remove paper and cool.
Ice with your favourite icing. I used icing/confectioners sugar and flavoured coffee creamer, couldn't think of anything to use???
Now have to admit, I have had better cakes, however I have had a lot worse over the years. For the speediness and convenience, this one wins hands down. I will be making this again and again.

Just had a thought, to make a chocolate cake, substitute a couple of tablespoons of flour for cocoa.........haven't tried that, but it should work.

Hi Gill. I was delighted you made the cake and blogged about it. Was nervous about the metric thing. Our cups are 250ml instead of 200ml. I usually say that type of thing, but lately I haven't.
I did try a chocolate one in metric and imperial but couldn't tell the difference, it is a very dry cake. But the quantities are smaller I suppose.

You may have adjusted the recipe already. I would translate the butter as 4oz.
Here is a recipe chocolate cake made in a cup, in the microwave.
DANGEROUS CHOCOLATE CAKE-IN-A-MUG
1 coffee mug
4 Tbsp. cake flour (plain, not self-rising)
4 Tbsp. sugar
2 Tbsp. cocoa
1 egg
3 Tbsp. milk
3 Tbsp. oil
Small splash of vanilla
3 Tbsp. chocolate chips, optional
Add dry ingredients to mug, mix well with a fork. Add egg, mix thoroughly. Pour in milk and oil and vanilla, mix well.
Add chips, if using.
Place mug in microwave, and cook for three minutes on 1000 watts. Cake will rise over top of mug--do not be alarmed! Allow to cool a little; tip onto a plate if desired. Eat! (This can serve two if you want to feel slightly more virtuous.)
***And WHY is this the most dangerous cake recipe in the world? Because now we are all only five minutes away from chocolate cake any time of the day or night!!!***
Being someone with a sweet tooth, one of these days I'll have to try this quickie. :-)
I don't think you can have been brought up in Wartime Britain!!!! I never developed a sweet tooth and I've always put that down to rationing. I've just had my evening snack .... a raw carrot!
Mind you, my poor husband drools over other peoples' cakes. I never bake any.
