If you like cauliflower and you like cheese, you will love this soup. I bought the Taste of Home Heartwarming Soups recipe book in Lowes (of all places?) and this recipe comes from there.
Ingredients:
1 medium head cauliflower, broken into florets
1 medium carrot, shredded
1/4 cup chopped celery
2 -1/2 cups water
2 teaspoons chicken or vegetable bouillon granules
3 tablespoons butter
3 tablespoons all-purpose/plain flour
3/4 teaspoon salt
1/8 teaspoon pepper
2 cups milk
1 cup shredded cheddar cheese
1/2 to 1 teaspoon hot pepper sauce (optional)
In a large saucepan, combine the cauliflower, carrot, celery, water and bouillon. Bring to boil. Reduce heat; cover and simmer for 12 - 15 minutes or until vegetables are tender (do not drain).
In another large saucepan, melt butter. Stir in the flour, salt and pepper until smooth; gradually add the milk. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened. Reduce heat. Stir in the cheese until melted. Add hot pepper sauce if desired. Stir into the cauliflower mixture.
Alrighty, above is the exact recipe as written in the recipe book. Here are my alterations. I do not like celery, so didn't use that. I do not like hot pepper sauce so didn't use that either. I added a tablespoon of mustard when I made the cheese sauce, I always do this.
When I put the mixture together, I found it a bit watery.
So I took some of the mixture and pureed it and that made the soup a lot thicker.
Also for those of you who have kids that don't like carrots, or in particular cooked carrots (I do!!) the shredded carrots looks like melted cheese that hasn't melted....sneaky or what!!! I will say this is a simple soup to make and is going to be one I'll make again. It's especially good with homemade bread!!

I hope you do get to try boiled peanuts next time you ar ein the south they are delish and if you like spicy you can get spicy ones too... most of the gas stations around here have them in crock pots every day but the ones I love the best are when you drive down the road and they are sitting there with a little trailor behind their truck and they have a big boiler... YUMMMMM and in the fall and winter when the nuts have just been harvested... Oh YUMMM... this soup you are making looks good too! I am not sure my brood woudl try it though they are finiky about trying things (I keep telling them they are missing out)

thanks for all your comment's, we had it again for supper tonight (leftovers) and it was as good as the first night we had it, although I did add a little more milk to water it down a bit, as it was a bit too thick even for us.

I LOVE cauliflower soup. I have a recipe as well...it has a bit of curry in it. I was thinking of you Gill - I was in New York for work...you want to see expensive!!! My very ordinary hotel room was $600 a night. Everything cost a fortune. I went into these little boutiques, cute stuff, but man...socks for like $90!!!! Who pays $90 for socks...you would have to be one gullible person. There are no big grocery stores in Manhattan, only these little stores where nothing comes in bulk and food is very pricy.
The soup recipe looks like something I've got to try :)
