Potato Kugel

This is a great meatless dish, which you can be eaten hot or cold. Personally I have never tried it cold though.

Ingredients:

6 medium potatoes grated
3 carrots grated
1 large onion finely chopped
2 eggs
2 tablespoons vegetable oil
2 tablespoons chopped parsley
1 slice wholewheat bread, made into breadcrumbs
2oz cheddar cheese grated
couple knobs of butter or marg



Combine the potatoes, carrots and onion. Lightly beat the eggs with the oil and pour over vegetables. Stir in the chopped parsley and breadcrumbs. Spread in a well oiled pie dish, dot with butter or margarine and bake at 350 oF for about 45 minutes. Sprinkle with the cheese after half an hour.



Okay that's the original recipe. I had some cooked broccoli leftover from the night before, so chopped that up and included that in the ingredients, and only used 5 small potatoes instead of 6 medium potatoes. I also added salt and pepper to the mix, as the original recipe calls for no seasoning?



I cooked mine for around 1 hour, as it was quite deep. It's a pretty filling dish, we had ours with Caesar salad and a couple slices of deli ham that needed using up.

Gill - it looks delicious. I'll definitely be trying that recipe as Bob LOVES potato in any form. Also, like you, I tend to customise recipes, adding bits of leftovers etc. Great fun.

I can picture what it is now. It is like something we make with zucchinis instead of potatoes. I bet it tastes really nice.

Hopefully I will be able to make it to Bahrain this week. Even though I eat very little meat, a few slices of ham sounds really, really good.

What does Bahrain have to do with it? You cannot buy any pork in Saudi Arabia. It is not allowed!
