I have been a busy bee and now I am pooped....

I was up at my dad's this morning and we canned pears. I brought home 2 dozen jars and he had around a dozen and a half. I then brought home a grocery bag of pears and made four cups of regular pear sauce and four cups of pear and raspberry sauce, which I'll put in the freezer. To start with my dad wasn't packing the pears tight enough, but even when he packed them tight we still got a lot of space in the jars. Does anyone know why?

The one good thing about this, all the pears were free from my dad's neighbours house, he has so many that he is burying bucketfuls of windfalls each day. I just don't have the time to do anymore at the moment.

Hi Gill Sorry I wasn't able to get back to you, between my mum and my flu life is a little crazy.

Did you waterbath can the pears? If so (and you should) they tend to shrink a bit and float which is why the jars don't seem so full now. Also, when you poured the syrup in the filled jars, did you use a rubber spatula pushed down the inside of the jar to release air bubbles? They sometimes helps too.

They look delicious!
