I don't know about you but I am so over Summer. I know its still hot and its still August, but I fancied some homemade soup. So I decided to make some Broccoli Soup and you know what it was so good. I have been using this recipe since 1995, and it came from the OXO Family Recipe Album booklet that probably came in a magazine. It takes no time to make this and its good.
Ingredients:
4 Cups cooked broccoli florets and chopped stems
2 tbsp marg
1 small onion chopped
1 stalk celery chopped
1/3 cup all purpose flour
4 OXO Chicken Bouillon Cubes, crumbled
2 1/2 cups milk
1/4 tsp each nutmeg and pepper
1/3 cup shredded Cheddar cheese
I steam one bunch of broccoli and as you see I also peel and cut up the stems of the broccoli.
Melt marg and add onion and celery (I do not like celery so never use it) and cook for 3 - 4 minutes.
Add flour, stirring for a minute.
Crumble stock cubes in 3 cups of boiling water. Gradually whisk liquid into onion mixture, bring to a boil stirring constantly.
Now I add broccoli to the liquid.
I like my soup pureed, so I puree this mixture until its sort of semi pureed.
Then add the milk, and heat gently over a low heat.
Serve with grated cheese and warm baked bread!!!!

That is what I need to do, pull out the veggies. I have been eating lots of junk lately. Last night I pulled out some mushrooms, then saute'd them in butter and poured them on top of a porterhouse steak! lol

I made a huge batch of Frog soup (cream of broccoli) a couple weeks ago - I froze most for quick easy lunches - but I skip the cheese.
I too have been craving fall foods, like beef stew and pot roast.

This sounds so good...i love broccoli, but I will have to wait til it gets a little bit cooler... For some reason I can't bring myself to eat soups and chili til winter time.

Mmmm! Now, that's a soup recipe I really would like to try, though I don't cook much these days. I think broccoli might be my favourite vegetable.
