Should I or shouldn't I? Recipes.........

I got this recipe for Make Ahead Mashed Potatoes in my inbox and had a look at it.  I thought this is something I might actually do.  I normally just cook my potatoes fresh that day.  Have you ever cooked your potatoes ahead of time?  I thought when I pull the turkey out of the oven and let it rest, I could put the potatoes in there to warm through?

Whipped Shortbread



Haven’t made your Christmas shortbread yet?  Here is the easiest shortbread recipe ever.  It can be mixed in a bowl with your beater or done in a food processor.


1 lb butter
½ cup cornstarch/corn flour
1 cup icing sugar
3 cups flour

Preheat oven to 325*. Beat ingredients until smooth, adding flour 1 cup at a time. Drop by teaspoonfuls onto cookie sheet. Bake for 15 to 20 min. or until lightly browned.

Other options are to roll out the dough and use small cookie cutters or, press into a 9x13 inch pan, prick with a fork and when cool, cut into small rectangles. A crowd pleaser for sure.

I tried the make ahead potatoes once, however, not too impressed with the result.
My shortbread is all done, I use a recipe that was given to me by an ex co-worker, it is so good, I have to keep them in the freezer or I would eat them all before Christmas. Yes---I can truthfully say, they do taste good frozen too.

Your shortbread looks wonderful. I never make it. I'm lazy about it I think and prefer to buy it. Doesn't look as good though!
The video of the ducks brought tears to my eyes. Poor little things.

I make twiced baked potatoes the day before and then bake them the second time the next day. Works for us! Merry Christmas.

Its lunchtime here in Melbourne on Christmas Eve and I popped in to say Merry Christmas and Best Wishes for the New Year. Hoping all your dreams come true in 2011 and you don't have to spend too much time with a hammer in your hand lol
Not sure I'd like to reheat potatoes but have saved the site address and may give it a go sometime - won't be tommorrow as we are expecting 28c which is great after all the unseasonal cold wet weather we have been having.
