Most of us will agree on this..........

You either love or hate liver, there is no in between I find.  I am a lover of liver, and although I don't eat it that often when I do I thoroughly enjoy it.  As it is a good source of iron, and I am lacking in iron, it is good for me.

I am finding it difficult to locate liver.  I happened to find this last week and picked up a couple of packages to put in the freezer.  The butcher said he was having trouble finding any, as there is a shortage of beef?  Has anyone else heard that?  I do know the price of ground/minced beef has shot way up.  Gone are the days when you could get the lean for under $2 per pound.  Luckily we don't eat too much beef, so it doesn't really affect us.

With the clocks changing our hydro rate times have also changed, which I am finding annoying as I hate using the hydro when the rates are high.  Our rates are high from 11 am until 5 pm.  We eat at 5 pm, so ideally we should eat later or I prepare supper ahead of time; which is what I did on Wednesday.

I pulled out a pack of liver and made liver casserole using this recipe.

I also cooked some potatoes and mashed those, and made a strawberry and pear crisp using the toaster oven.  I had picked up a package of baby carrots for dh to take with his lunch but hadn't got around to using them, so figured we would have them for supper.
I divided the liver up into three meals for us.  One for Wednesday night and two for the freezer.  This is what our plates looked like:
I really enjoyed it and I am hoping with eating all those carrots my eyesight will also improve!

If we go out to eat and there is liver on the menu, nine times out of ten I will have it.  BUT nine times out of ten it's not cooked right, so it is always hit and miss.

Bit late I know but finally posting a picture of my menu plan.  As you can see, I had planned on having rice as an accompaniment with the liver but changed my mind.  Otherwise so far we have followed the menu plan to the letter.

Liver is marmite. I dislike but my parents loved it.

The Great Scot loves liver; me not so much... although lamb's liver is a good deal tastier (to me) than beef. Very difficult to find lamb's liver here.

We're not big beef eaters either; I could happily live on fish and seafood myself.

When I ate meat I loved liver, especially lambs or chickens. Liver and onions ~ yum! I agree, though, most eateries do not know how to cook it, and if incorrectly handled it is one of the most vile dishes you could be served.
I wonder why your butcher said that to you? It sounds most odd. Do you think red meat is falling from popularity in favour of chicken and fish maybe?
Oddly, while eating meat I was constantly anaemic, yet since becoming vegetarian {over 25 years now} my iron levels have been first rate.

I absolutely love liver too and will always order it out. I like mine done medium rare and it is hard to get. My husband wants it cooked to death.

We quite like Liver, I had it a couple of weeks ago when we went out for lunch with friends. It was pan fried with onions and perfectly cooked, my hubby was envious and wished he had chosen it instead of fish and chips, luckily there was far too much for me and he got to eat what I didnt need. I think he might go for that next time!

I bought a kilo of minced steak yesterday from the butchers and paid £7:50, it might be expensive but there is hardly any white fat in it, you can have it minced chunky or regular. I will use some if it today for steak burgers with salad.

Looks scrummy! I've tried liver once but i wasn't sure on the texture, tastes change as you get older though so i may try it again soon :) xx

Your right it is hard to find liver. I dont mind though as I'm not a fan. I will eat it but prefer to eat something else lol

I'm not a fan of liver, but I've only had it once. It was grilled and a friend of mine had some in a restaurant and let me try hers. I know American cattle was being sold a few years ago because of the droughts here and the cost to feed them was skyrocketing. I'm not sure if that has anything to do with the shortage or not. Beef is still high here too, unfortunately. We stopped eating as much of it as a result.

I love liver too (and Marmite) ! it's quite easy to find here in UK and usually very cheap making good nutritional meals.
I don't mind if it's lambs, beef or ox, it's all good, and as you say the secret is to cook it properly.
Cooked slowly, it's delicious and just falls apart.

I really don't like liver. I ate it (reluctantly) when I was a kid because my mother made it for us as one of her super healthy meals. But no way would I touch it now!

I hate liver!! DH loves liver so when we go out and there is liver on the menu he always orders it. Like you, it's often hit or miss!

I liked liver when my mom fixed it...she cut hers into 'cubes'....lightly floured it, and cut up an onion, maybe more...and fried it. Delicious! She always said the secret was to not overcook it.

Beef is going to be in short supply not because it's 'falling from popularity', but because for the first time in DECADES farmers are actually making good money for their cattle. So many cattle guys (often 50+ years old) are selling their entire herds and actually getting out with money in their bank accounts!! They are all getting out quick before the market goes down again (like it always does).

I love the liver an onions my husband makes. The gravy is to die for. We don't eat it often enough. I love black pudding too but it has to be cooked in very little oil and served crispy both sides with a poached egg on top. Anything else is sacrilege! Have a good day.

I'm from New Orleans. Liver, onions and grits are a favorite of mine. It's hard to find good liver out, but a local doughnut shop really has some tasty liver and grits.

I can't stand liver. I know it's rich in iron, though. I'm a regular blood donor, but sometimes my iron levels are a tad too low for a donation, and they say, "eat liver."

I don't eat it but saw a bunch really cheap at my local store the other day. Strange, maybe in your area there are lots of liver lovers? :)

I love liver, but haven't had it for ages. The hydro rates don't change to summer hours till May 1 (according to the sticker I have on my fridge).

Gill, I'm afraid I'm one of those who hates liver. And, worst of all, without ever having tasted it. My mother made it really well, even people who usually didn't like liver liked it her way. And yet, she could never get me to try even one bite. It's an aversion I can't get past.

Fried Liver and onions YUMMY ! I dont have it to often either lol ! We eat beef, chicken, fish , pork and lamb Papa is a meat and potatoes kind of guy lol ! You are organized for sure I wake up every morning and the first think on my mind is what a lovely morning if it actually is then it is what to make for dinner tonight lol .
