Finally the fireplace is finished. I have a couple of little jobs to do on it, they are cosmetic things, otherwise its a job completed. Here it is before we started on it, mind you we had cleaned it up at this point, as the stone was all black.
Here is the after.
Now for the recipe. I saw something similar in a magazine and did my version of it. As usual though my quantities are very vague, sorry.
Lentil and Cheese Salad.
Ingredients:
1 can Lentils (19 oz) or prepare your own
A block of cheese cubed, I would use around 6oz, and I used cheddar
2 - 3 Spring/salad onions sliced
Tomato diced, I used half a large one, grape tomatoes would work well
1 cup of frozen sweetcorn, or 1 can of sweetcorn
Dressing:
1/4 cup Olive Oil
1/4 cup Lemon Juice
1 teaspoon crushed garlic
Dried oregano, salt and pepper to taste
Mix first five ingredients together. Mix dressing ingredients in a small bowl, then pour over the first five ingredients and refrigerate for a couple of hours. We had ours with pita bread and it was good.
