Egg and Cress sandwiches are a throw back to my childhood days. Cress is a popular item in the UK, both in sandwiches and as a garnish, and is used as a microgreen, not as a full grown plant. Think how we use parsley as a garnish, they use cress. It's tastes a cross between watercress and mustard.
I had a hankering for egg and cress sandwiches the other day, so decided to make them with what I had on hand. I rarely eat bread anymore, so this was a treat for us.
All you need for the filling is hard boiled eggs, cress or microgreens and mayo, plus any seasonings you want to add in, like salt and pepper.
These are the micro greens I use, as they are grown in Canada. It was handy I got one with 30% off. They are usually between $4 to $5 a package. I used 3/4 of a package probably, as I had taken some out of this package for something else.Thought it was funny when it said "IT MAY CONTAIN MUSTARD," when it says Kick'n Mustard on the front of the package?? Notice how everything is in both English and French here in Canada?
Not sure which exactly micro green plants these are but they taste good.
So all I do is mash up the eggs, add the mayo and micro greens and spoon some in between a roll or a couple slices of bread. It's so good and the micro green bulk out the filling so it goes further.

I have never had egg and cress sandwiches, but egg and onion. I love ❤️ a cooked chicken 🐔 sandwich.
Now there's a throw back, you always used to see cress in the supermarket but I haven't seen any for ages. That filling was always an option in pre packed sandwiches too but again its disapeared, I don't think it's a popular choice anymore

I am getting them from Metro, but the Loblaws brand of stores has them also. Mine is Zehrs. Walmart does not keep them. Goodness Me also stocks them.
My aunts go to sandwich was canned salmon with vinegar mixed in as well. Used to love that.
I don't recall ever having egg and cress sandwiches but your filling certainly looks good.

Yes to egg sandwiches, but as a Western Canadian, cress is new to me (other than references to it on BBC shows occasionally). Looks delicious though.
Sainsburys and Tesco both sell cress in UK - and it does make a yummy little spread with boiled eggs, I don't always add mayo. I also enjoy eggs with chopped spring onion and mayo. Simple fillings are lovely I think. Elaine in UK
