I made Scotch Eggs for supper on Monday night. They were so good, I must make them more often, as they were so simple to make.
To make them you need:
Hard Boiled Eggs
Sausage or sausage meat
1 egg, beaten
Seasoned flour
Either breadcrumbs or coating of your choice
Peel hard boiled eggs. If using sausages take them out of the casings. Then wrap the eggs with the sausage meat. I used breakfast sausages and needed three per boiled egg. You can add any type of seasoning you want to the sausage meat. As I like "plain" food, I am happy as is.
I put mine back into the fridge to firm them up. When ready to cook them, roll in seasoned flour, dip in the egg and then toss them in breadcrumbs or coating. I used a package of Shake and Bake. (One scotch egg looks different from the other; far right, as I used different sausages on that one)
I placed them on a tray covered with tin foil and then parchment paper; easy clean up! Cook at 375 oF for around 45 minutes, turning them over half way through. They are as good cold as they are hot. Dh will be having one in his lunch every day as well.
We had one with roasted potato wedges, that cooked at the same time and coleslaw. It was a yummy supper.
For afters I had stewed some rhubarb, made some custard and topped it all with a little strawberry yogurt. That was good also and there was enough left over to have it for tonight's dessert cold.
Rhubarb and custard was something we had as kids. That along with Scotch Eggs are very British.
