Made these veggie burgers the other night. I buy the veggie burgers from Costco and the burger buns from Zehrs, which is a PC store. Those burgers are so tasty. I cook them in the air fryer for 20 minutes, turning them half way through, so they cook evenly on both sides. I enjoy these mini buns, better than the larger ones; but can only get them at stores which sell the PC products.
We had two each for our supper and they are so filling.
Although I am not vegetarian, I don't eat much meat, so we probably eat more meatless meals than meals with meat. One of our grand daughters is pescatarian. She is only 9 years of age, but made this choice over a year ago and has stuck with it. We thought it was a passing phase, but I guess not.
Do you eat meat?

I do eat meat, but very little beef. I prefer lamb, pork, chicken and salmon. I mostly eat chicken and salmon, not together but they are my favourites. Your meal looks delicious.
We eat lamb, chicken, bison, fish/seafood and occasionally beef.
We do eat very small portions of meat compared to the typical US serving and we do have all veg meals once or twice a week.
I eat meat yes but if the option is good, no issues doing veg/pescatarian!
We eat veggie meals a lot but also eat meat as well - mostly chicken and pork. We use hamburger because we can stretch it into several meals but haven't purchased steak or roasts in several years. We rarely eat something like an entire chicken breast and instead cut it up and add veggies to stretch our purchasing dollar. Same for pork. We maybe have fish once a month but it's too costly to have very often and is difficult to stretch with other additions.
I do, but I was a pescatarian for about a decade. I've never enjoyed meat much and I learned a lot about nutrition and my body from that experience most of which I still apply.
I eat meat and now I am hungry.
